<p>Yoshinori Ishii is an executive chef at Japanese restaurant Umu in London.  If you are serious about making real sushi, learning from a professional chef makes a big difference.  The takeaway from this video is the importance of selecting the freshest seafood.  A sushi chef knows how to pick the best fish, an indispensable skill that every chef needs to master.  The odd looking thing you see in the video is a real wasabi root.  Fresh wasabi is not readily available.  It is very expensive and you will not find it even at an Asian market.  Fresh wasabi is used only at high-end Japanese restaurants.  The green wasabi sold at a store is not pure wasabi.  It is mixed with other types of horse radish and food coloring is added.</p>

<p>I&#8217;ve seen so many videos on how to make sushi.  What&#8217;s interesting is that each video has its own unique tips and insights.  The takeaway on this video is how to select a good quality nori or seaweed.  Darker the color, the better the nori is.  I didn&#8217;t know that.  I usually assume an expensive nori means better quality, but this is another way to determine the quality.  Thanks.</p>

<p>This is as healthy as a sushi can get.  All ingredients are very low in calories.  No mayo, sauce, or oil is used.  In addition, Heather consciously used brown rice and apple cider instead of white rice with sushi vinegar.  In general, sushi vinegar has mirin which contains a bit of sugar.  Probably the most difficult part of the process is to use the right amount of rice.  She is very informative and provides all the important tips on making of something that looks simple.<br />
